Using varnish as a cache for more than one website

Regarding a supervisor process, I have used varnish with daemontools for
some time now. I used to manage a couple of internal sites that got
similar traffic to yours (the varnish instance did, not the individual
sites) on daemontools and it saved itself many times. I recommend it.
