reset varnishstat counters?

I disagree. Counters should be counters and I would not expect them to be
reset. Look at things like the various linux kernel counters - AFAIK there
is no way to reset them.
You need to have your monitoring software convert the counters to gauges
and then have the system trigger a warning when a certain gauge value
passes a threshold.
