Comment:

 This is not really a bug, but a general question. Those are better asked
 on one of the mailinglists (you get a far wider audience: Only a handful
 people watch the bug tracker while far more people read the mailinglists).

 I suggest you send your question to varnish-misc, and we'll probably
 figure it out. Though as far as the log goes, your server is returning
 http 200 OK, and all probes are good, and you have an interval of 10
 seconds, timeout of 5 seconds and a threshold of 8 out of 10... With that
 setup it could take quite some times (45 seconds, if I'm not much
 mistaken) for Varnish to mark a backend as unhealthy.

 But re-post your question on the mailinglist and we can continue it there
