 Line 30 of the init script

 30 DAEMON_OPTS="-a -w $logfile -D -P $pidfile"

 should be moved down to line #34, past the sourcing of the
 /etc/sysconfig/varnishncsa file.  With the current setup, if you set your
 logfile variable in /etc/sysconfig/varnishncsa , it gets ignored as
 DAEMON_OPTS is already set with the default value.
