Comment:

 First, please file separate tickets for separate bugs, it makes it easier
 for us to keep track.

 Can you please provide varnishstat from when you see the 100% load
 happening?  Also, please provide varnishlog for your second problem.
 Varnish won't change the headers out of the box, apart from adding a few,
 those you can unset using remove or unset in VCL.
