Varnish only using some of reserved ram, IO-trashing

I'm not a kernel expert, but it sounds like a 32 bits memory address 
limit. Your CentOS4.5 are very likely running in 64 bits mode, while the 
CentOS 5.0 is in 32 bit mode.
