Varnish in front of apache with name and ip based virtualhosts

We have setup varnish on port 80 in front of 4 separate physical servers running apache on port 81. Varnish points to these apache backend servers.
Each apache server host the same multiple sites on each node. Are you looking to split request for certain sites to a particular apache/backend server?
I can take one backend sever out of service and varnish will not send request to that server.
