The problem is that varnishd segfaults from time to time. It then has
to grep all GBs from the backends again. For a hot restart this might
be good to have too (after server upgrade, server failure, ..).<br>

That is not possible.
However, you can reconfigure Varnish at runtime, so there should be
little reason to shutdown a varnish process once it is in production.
